Festive Wreath of Kindness

The festive season is here, and for some people that means lingering over decadent meals and desserts with friends and family. If you're looking for a delicious dessert, that will satisfy your taste buds this summer, we've got you covered. And even better as well as visually being a talking point, this dessert can start a conversation about kindness, as you explain what Kindness Spread is. Ingredients:

1/4 cup Kindness Spread (Fix and Fogg Chocolate Almond Spread)

3 large egg whites at room temperature

a pinch of salt

1/2 cup + 1 tablespoon granulated sugar


Instructions:

  • Heat oven to 150°C. Line a baking sheet with baking paper.

  • Place the Kindness Spread in a small saucepan and warm it on low heat until it is melted.

  • Put the egg whites and salt in a large bowl and whisk until you get soft peaks. Begin to add the sugar a few spoonfuls at a time. Keep whisking while adding the rest of the sugar spoonfuls at a time and until your meringue thickens. keep whisking until the meringue mix is thick and shiny.

  • Add the Kindness Spread into the meringue and gently fold it in. Take care not to over-mix so you will keep the lovely swirls.

  • Using a large spoon, drop the meringue onto the baking paper lined baking sheets to make a wreath shape. If you felt so inclined, you could pipe the meringue mixture on to the tray to create a wreath shape - just use a large-ish piping tip as the Kindness Spread has some crunchy nut pieces that might get stuck otherwise.

  • Place in the oven for 10 minutes.

  • After 10 minutes, immediately lower the heat to 95°C and rotate the tray. Bake for an hour.

  • After an hour, check the wreath and see if it feels and looks dry. If you see moisture or shine leave it to bake for about 10 more minutes.

  • Shut off the oven and leave the meringue wreath to cool in the oven for a few hours or overnight. When you remove the wreath from the baking sheet, tit should release easily from the baking paper and sound dry when you tap them.

  • The meringue wreath can be stored in an airtight container for up to a week.

  • Decorate with lashings of whipped cream, and you preferred toppings - berries, chocolate shavings, chocolate sauce, crushed brittle, freeze dried fruit are some tasty examples.
