Welcome back to our latest installment of Baking on an Apron-String! Our bakers are now back to their regular baking schedules, delivering kindness to their communities across the country. Throughout lockdown, our bakers had to get pretty creative with sharing kindness from the confines of their bubble.
For nearly two months, GB Mary Curry went live on Facebook every Thursday at 11 am and welcomed everyone to her Kindness Kitchen where she would teach recipes and baking skills to keep our younger GB’s entertained.
For the last week of her live streams, Mary made the Vanilla Wacky Cake, adapted from a recipe on totallythebomb.com, and now we are sharing the recipe with you! Easy for kids to make and fun to decorate, make sure you share your final products with us by tagging us on Facebook (@GBBaking) and Instagram (@good_bitches_baking) so we can share them on our social media.

Vanilla Wacky Cake
1 and ½ Cups (180g) plain flour
1 cup (200g) sugar
1 tsp baking soda
1/s tsp salt
1 tsp white vinegar
1 and ½ tsp vanilla extract
5 tbsp (or 1/4c +1T) vegetable oil
1 Cup (240ml) water
Preheat oven to 180C (350F). Grease an 8” (20cm) square or round cake tin. If you want to make cupcakes instead, grease or line your muffin tins.
Mix together dry ingredients in a bowl (you can even mix this directly into the greased pan, making it a NO-bowl recipe!)
Make 3 little wells in the dry ingredients - pour the vinegar into one of them, the vanilla into another, and the oil into the third.
Pour the water over the lot and stir until smooth.
Pour into prepared tin or muffin cups, pop it into the oven, and bake for around 35 minutes, checking to see if it’s done from around 30 minutes. (If you’re making cupcakes, they should be done in around 20 minutes, start testing after 15.)
Let cool and then frost and decorate or enjoy as is!
